(One Japanese publication names a top ramen chef each year, and the results are watched as closely as a World Cup final.) At Mitaka, Ren offers multiple types of broth: tonkotsu (flavored with pork bones),
shoyu (which has a soy sauce base), miso, tantanmen (made with spicy miso and chicken), tori paitan (a chicken broth) and a vegetarian broth made with mushrooms and soy milk.
These include shio (salt-based ramen),
shoyu (soy sauce-based ramen), miso (soybean paste-flavoured ramen).
White rice, shrimps, crab salad and a host of vegetables topped with sesame
shoyu sauce and spicy mayo round out the delicious dish.

It offers visits to its plant to pack site which allows tourists to take home farm products like corn pops (wasabi
shoyu), banana crisps in caramelized sugar, "Sabanana" cider vinegar, "atsarampalaya" pickled bitter melon, and Ilocos bagnet chicharon.
Selections include Spicy Miso Ramen (spicy grilled chicken thigh, spinach, bean sprouts, chili miso paste,
shoyu egg, naruto, negi, $13), Tempura Udon (tempura vegetables and shrimp, naruto, negi,
shoyu broth, $12), Kara'Age Chicken (Osaka's seasoned salt, spicy mayo, lemon wedge, $7) and a Rama Bowl (edamame, avocado, cucumbers, broccoli, seaweed salad, kaiware sprouts, furikake sushi rice, house dressing, $13, with optional protein).
At the Hamada Ramen Nook, one of the restaurants at BCC, the club now offers four new ramen flavors: The Emperor's Tonkotsu Bowl, The Ronin's Spicy Miso Bowl, The Samurai's
Shoyu Bowl, and The Shogun's Special, all made with the finest Cordillera ingredients.
